RECOGNITION FOR THE UNEXPECTED

THE BUZZ

DC Magazine

For more than 30 years, I have built my craft through focused hours in the kitchen—repeating, refining, and pushing technique until it can carry the flavor I imagine. I cook at full volume: fearless ideas, deep technique, and big flavor at all costs. From the James Beard House to national culinary press, my work is built on risk, instinct, and the belief that memorable food should leave a mark.

IN THE PRESS

Professional portrait photography of a male chef with tattooed arms looking directly at the camera. He is wearing a white chef coat and black apron against a textured, rustic brick background.

CHARM CITY COMMON

It's not called Charm City for nothing. Baltimore is home to a thriving and beguiling restaurant scene that features rising star-chefs like Espuma alum Cyrus Keefer. His menu at Fork & Wrench is rooted in the Chesapeake Bay region but inspired by global techniques and ingredients.

Cotechino-filled pig trotter prepared by Cy Keefer

Hold the Caul Fat, We Got a Trotter!

Keefer takes the cotechino filling and stuffs it into the traditional “casing” for a zampone, a pig trotter, and bastes it to crispy, crunchy pork-skin perfection.
